Helmed by cookbook author and television personality Jane Butel, Jane Butel’s Southwest Cooking School arms aspiring chefs with savory culinary artillery. For more than 50 years, Butel has sharpened her culinary prowess—authoring more than 20 cookbooks and hosting four television and national radio shows—by developing an insatiable catalogue of accessible demonstration classes that delve deep into American Southwest and regional Mexican cooking.

Master the spices, sauces, and complicated handshakes of southwestern fare with one of Butel’s introductory classes, in which greenhorn gourmands observe how to prepare and sample quintessential New Mexican eats, including guacamole, quesadillas, and green-chile chicken enchiladas. Each class focuses on a specific menu and theme, with items that speak to a wide range of culinary topics including healthful cuisine, grilling, quick-and-easy cooking, and party favorites. Classes are held on the fourth Thursday of every month from 5:30 p.m. to 8 p.m. Each class can host a maximum of 30 students, and spots are first-come, first-served, so call to reserve your saucy seat.

In the village of Corrales along the Rio Grande, Jane Butel's weekend-long cooking classes teach the techniques needed to create savory southwestern specialties in hands-on lessons. From Friday–Sunday, apprentice chefs cook in groups of two or three while Jane and her staff guide them through the recipes. In addition to three individual classes, customers receive dinner on Friday, breakfast and lunch on Saturday and Sunday, a cookbook, an apron, a diploma, and a lock of Rachael Ray's hair.
