After a lengthy search and several tense rose ceremonies, the restaurateurs settled on a former cantina to build from the location's existing traditions and spacious, colorful accommodations. Chefs marinate their fajitas with a piquant blend of spices, and tap into the wellspring of classic Tex-Mex dishes to fill their menu with enchiladas, chimichangas, and grilled tilapia. A six-hour-long happy hour closes each day to whet patrons' whistles with a house-margarita recipe and daily water-balloon-eating competitions.
