Every day at Great Harvest Bread Company begins the same way: with employees milling wheat. They do it onsite, passing off the whole-wheat kernels to bakers within 48 hours of milling. Then, at the crack of dawn, bakers bake the wheat into cinnamon rolls and cinnamon chip bread, scones, muffins, and their signature breads. By the time customers begin to filter into the shop, the fresh baked goods are ready for eating, along with a cup of coffee or tea—which also goes well with the gourmet sandwiches served at lunchtime.
