What the Pho
When the family behind What the Pho! came to the Puget Sound area as political refugees in the mid-1970s, they couldn’t bring much from their native Vietnam. But they would always have their time-tested Vietnamese recipes. Hoping to share them with American diners, they created What the Pho!, offering dozens of varied pho selections alongside other traditional Vietnamese dishes, including charbroiled pork over vermicelli noodles and black tiger prawns atop steamed rice. Although at this point, What the Pho! locations can be found throughout Washington—much like backpacking squirrels—each spot boasts a clean, modern dining space; fast service; and of course, plenty of pho.
