Eight Piece encourages edible ingenuity with a create-your-own menu of sushi rolls that customers can decorate with a variety of toppings and specialty sauces. Everyone starts with one of eight dressed-down rolls such as spicy tuna, tuna and cucumber mixed with spicy mayo sauce, or Philadelphia, salmon, avocado, and cream cheese. Next, guests top their rolls with one mixt topping including the rock 'n' roll’s baseline of oven-baked scallop, crabmeat, and masago with cream sauce or with two individual toppings such as white tuna and avocado or jalapeno and pineapple. Finally, sushi artists drizzle rolls with one specialty sauce such as wasabi mayo or chili sauce to cap off a creation as unique as a snowflake born on Leap Day (all rolls are $8).

Eight Piece also designs signature rolls ($8) matched with miso soup ($1.50) and four kinds of salad, including the fish-flecked 4 Season salad with tuna, white tuna, salmon, avocado, greens, onions, and sweet vinaigrette ($9.50).
