Zilzil tibs, thick strips of rib eye ($13.95); yebeg wat, a traditional lamb stew ($12.75); and gomen, collard greens with onions and jalapeños ($10.75); all lend spice-filled aromas to the air as they scintillate taste buds. Patrons can mix and match their own selections or choose Addis Ababa’s four combination platters with four stew options.

Chefs at Addis Ababa Restaurant have been piling injera flatbread with authentic Ethiopian stews since 1982. During a daily lunch buffet, aromas of butter-sautéed lamb and collard greens mingle with East African decor such as goat-skin rugs and handcrafted basket tables, which "make for a stylish setting," according to the Washingtonian's 2004 guide to "Dining Out in Silver Spring". At dinner, servers carry out combination platters filled with pepper- and ginger-seasoned chicken and tender minced meat cooked to diners' specifications.
