Burritos, like purses, have long been praised for their portability, tasty fillings, and invaluable role in smacking greasy-handed schoolchildren. Take a bite of a versatile bundle with today's Groupon: for $20, you get $40 worth of Mexican mouth-stuffers, margaritas, and more at Agave, located in Summerlin South.
Agave's menu has a full lineup of classic south-of-the-border savories, including tacos, enchiladas, and burritos, in addition to creative fusion fare, such as the Negra Modelo–marinated grilled rib eye, a hefty portion of steak amidst grilled nopales and a roasted tomato and portabella mushroom reduction ($26.95). Blue corn chicken enchiladas (roasted chicken with green chile sauce, asadero cheese, and Mexican crema, $15.95) leave savory sauce trails wherever they go, and the crispy fried machaca beef burrito ($14.95) is like an explosive beef grenade. Agave also stocks more than 100 types of pure blue weber agave tequila; check the drink menu for a list of margaritas.
Agave's bright and cheerful décor is a fiesta for the eyes. The pink-and-orange dining room, which is stocked with intimate circular booths and tall wooden stools, is round and has a neatly woven thatched roof on which carnies try to sleep at night. The spacious outdoor patio features a wooden awning, comfortable multi-hued seating, and several clay fire pits, keeping travelers as warm as a batch of freshly born puppies.

- Taco sampler: GREAT. Crispy, soft taco shells (I know right??! But yes crispy AND soft!). – Fork D., Yelp
- Menu is delicious, with lots of unusual seasonings. Northern New Mexican flavor. Try the portobello tamale appetizer & ask for extra mole sauce. – COArtist, TripAdvisor
- The vegetarian relleno is freaking amazing, as is any salmon dish. – OpenTable.com reviewer who dined on 3/19/10
Colorful bull's-eye windowpanes admit flashes of afternoon sun through their wavy glass, sending tinted splashes of light throughout Agave’s dining room. Like the panes, the dining room is circular, without a single corner to send mischievous diners to for time out. Bright green booths and tables revolve around a central bar, where the bottle-savvy staff crafts margaritas and cocktails with more than 100 varieties of blanco, reposado, and anejo tequilas. These elaborate concoctions can accentuate the flavors in authentic Mexican dishes such as al pastor roasted chicken and machacha beef enchiladas.
