Coquito’s chef, Moises Vidaurre, blends worldly travels as a member of the U.S. Navy with training at the Le Cordon Bleu College of Culinary Arts to craft a menu of traditional Italian dishes. The antipasti menu touts the calamari grigliato, whose squid steep in extra-virgin olive oil, herbs, and red-pepper flakes before sizzling on grills and being served on a bed of sautéed spinach. Atop the parma bruchetta, goat cheese and prosciutto di parma comfort broken artichoke hearts.
