Atlas Cafe

Instead of sticking to the basics, the culinary team at Atlas Cafe adds a playful twist to its sandwiches, salads, and pizzas. The cooks enliven housemade mayo with citrus, pair sage tomato sauce with yams and beets, and layer smoked trout with fig chutney on toasted multigrain bread. They make many of their dishes’ innovative components themselves, such as the ginger-tofu vinaigrette or the chive and sun-dried-tomato cream cheeses, which spread over bagels just as a discus thrower is heaving the sun into the morning sky. Though smoked ham and roasted pork make appearances on the menu, there are plenty of vegetarian and vegan options, such as the beet salad.
