Developed by a trio of local eco-friendly entrepreneurs, the eatery anchors itself on fresh, locally sourced ingredients and recyclable materials.

The menu's signature dish harkens back to the eatery's former name, Bimbo’s Bitchin’ Burrito Kitchen, and packs four types of tortillas with organic beans, house-made pico de gallo, and a choice of four creative proteins. Beers from local brewers, such as Rainier and Manny’s, clink off 10 different Mexican bottles at a full-service bar upstairs. In the Cha Cha Lounge belowground, black-velvet paintings shadow the walls alongside sepia-toned photos of luchadores, easily identifiable due to their characteristic wristbands.
