In a hands-on class, students master the key to foolproof rice, followed by a lesson on art of sauce-making, such as eel and Bang-Bang and are then shown how to cut vegetables. Students will learn how to roll a vegetarian roll during the class. After rolling, slicing, plating, and saucing, pupils walk away from each two-hour lesson with recipes and resources for home cooking. As a part of their lesson, students are treated to complimentary appetizers, and a sushi sampler—as well as a free bottled water, although attendees may also bring their own beer or wine. Chef and instructor Kelly Viall returned to her hometown of Birmingham after 15 years of whipping up fresh-fish dishes in Seattle and along the Gulf Coast. Now hundreds of miles from a coast, she still clings to her passion for ocean-fresh seafood and teaches students to master a variety of culinary techniques.
