Chefs sculpt a half-pound of beef into a handmade patty destined for the chipotle blue cheeseburger, on which blue-cheese crumbles join forces with bacon, chipotle mayo, and an onion ring ($8.99). A choice of lemon pepper or Cajun seasonings bespeckle farm-raised catfish fillets ($9.99).
