There’s a Pacific theme in the background of executive chef, Michael Jewell. The inspirational seeds for his current career were first planted at a Chinese restaurant. He went on to work as a fishmonger at a San Francisco market, eventually leading to his enrollment at the California Culinary Academy. After graduating, he cut his teeth in an apprenticeship smack dab in the middle of the Pacific: at the Westin Hotel in Maui. Michael now calls upon these experiences and a number of subsequent professional gigs to lead the team at Boulevard Bistro.
One of the primary upshots of Michael’s diverse Pacific culinary background might be his emphasis on freshness. His menu’s seasonal offerings include American dishes prepared from local ingredients. Many of these dishes are influenced by the California wine country. Additionally, Michael and co. make fresh gelato in-house each morning, saving patrons from weekly trips to a back-alley refrigerator in Italy.
