Depending on their experience level, customers may choose either the basic Divine Art of Chocolate Making class or the more advanced Introduction to Dipping, Enrobing, and Transfer Sheets class. In the basic class, chocolate expert Michael Canady gives a brief presentation on chocolate making before teaching students to temper chocolates, create cream fillings, and assemble a custom box. The more advanced course delves into the nitty-gritty of making fondant, using the culinary guitar, creating single- and three-tier ganache sheets, and dipping ganache squares, truffle shells, and alcohol-infused truffles into tempered chocolate, then forming them into edible designs. Both classes let students taste their work.
