Wine Essentials I explores the basics of wine, the characteristics of "classic" grapes, and the truth behind confusing wine terminology and misconceptions. The two-hour classes include a sampling session with a range of wines, helping students learn to discern the factors that influence the character of each. At the end of the course, students sample artisan cheeses from around the world with an eye toward pairing.

Wine Essentials II elaborates on the foundations laid by Wine Essentials I, teaching students the signature characteristics of a particular country, region, or grape varietal. Instructors also pair this tight focus with more general elements, expanding students' knowledge of grape growing, wine production, and proper tasting and food pairing techniques.

The Old World vs. New World course explores Europe's most famous grapes—and how wines such as cabernet sauvignon and pinot noir changed after the grapes were transported to New-World regions including North and South America. Classes evaluate a range of wines, focusing on stylistic differences, regional classifications, and differing wine-making traditions.

To further the learning environment for everyone involved, Cellar Rat Wine Merchants offers a few tips on wine-tasting etiquette, encouraging patrons to forgo wearing perfume, talking on the phone, and licking their neighbor’s wineglass.

Cellar Rat Wine Merchants is the product of John Opelka and Ryan Sciara's commitment to good wines. Each of the wines on the shelf in Cellar Rat has been vetted by the staff—nothing is sold to the public unless the staff would drink it or use it as a substitute for milk in cereal. The resulting more than 800 wines, 70% of which are less than $20, make for tasty everyday and special-occasion beverages, as do the number of premium spirits and handcrafted brews stocked alongside the wine.

Cellar Rat’s vino experts do more than just discern the difference between good and bad wine; they also teach others how to do so during wine classes that delve into the intricacies of tasting. They even make pairing suggestions for the artisan cheeses, gourmet cured meats, and pate also sold in the boutique shop.
