Choose from Four Options

  • $99 for a hog-butchering class (a $200 value)

During hands-on classes, students learn everything from how to break down an entire side of hog to how to make sausage and bacon. The gnocchi class also includes making a porchetta sauce, and students will make a simple bolognese sauce in the string-pasta class. Each participant goes home with about a pound of food to enjoy later, and is invited to dine on their creations around a 20-foot signature table.

Additionally, butchers lead classes in a stone-floored training annex on topics that include pasta making, butchery, and wine tasting.
