During one-hour sessions, pupils explore the flavour and creation of chocolate, touching upon the growth of cacao beans, the ethics of production, or the fillers used in mass production. Students sample cocoas of varied origin and composition culled from numerous manufacturers before tasting Xoxolat's blended bars, such as dark chocolate brimming with sea salt and peppercorns, tortilla chips and lime, sour cherry chile, bacon, and many others.
