Land of Sushi's resident chefs assemble a menu brimming with authentic Japanese eats, including fresh seafood spreads, sashimi entrees, and sushi rolls. Diners can recharge stomach batteries with crispy calamari flavored with curry and sidled up next to a duo of sweet thai chili sauce and fish sauce ($7). Or patrons can brandish forks and pocketsize augers to excavate plump flour noodles from the nabeyaki udon ($12), unearthing savory morsels of napa cabbage, chicken, fish cakes, seaweed, and enoki mushroom. Otherwise, sesame chicken anoints tempura chicken with sesame soy sauce ($12) to unify warring factions of sweet and salty teeth. Land of Sushi lives up to its name with an extensive list of sushi and sashimi, including the river roll, which swaddles eel and avocado ($6), and the boston roll, which clutches succulent morsels of shrimp and cucumber within its mayonnaise-lacquered embrace ($5.50).

Steve Lin, owner of Land of Sushi, opens up shipments of fresh fish and live scallops every day in the kitchen. Behind the restaurant’s sushi bar, the chefs encase seafood morsels in specialty rolls such as the mango roll with spicy tuna and the uni roll with fresh sea urchin, creations that led to their being named Best Sushi Restaurant 2012, Best Japanese Restaurant 2013, and Best Sushi Bar 2014 by the Denver Westword. Non-sushi dishes include 9-ounce new york strip steaks with teriyaki sauce and Alaskan halibut with miso glaze.
