Each person receives four tasting portions of select entrees and a dessert. Though the tasting menu changes nightly, it features selections from the small-plates and large-plates sections of the menu. Diners might enjoy tasting portions of flash-fried Louisiana alligator, bayou sassafras ribs with chipotle mashed sweet potatoes and Cajun slaw, or pillowy beignets dusted with powdered sugar.<p>
