Stationed behind their flat topped hibachi grills at the Zagat-rated Fuji Mountain Japanese Steakhouse, the chefs flip vegetables, filet mignon, and scallops through the air before their diners' eyes. In addition to performing skillful tosses and catches, the chefs also hand roll sushi such as the four seasons roll with yellowtail, tuna, salmon, and fluke. The restaurant celebrates its 12th anniversary this year.
