The yam plant is known as the konnyaku plant It is in the yam family but only grows today in Asia. The powder derived from that plant is known as gluccomannan. Gluoomannan is 100 percent soluble fiber which is a fiber that does not contain calories.

what is the expiration date on noodles? eat before?

All batches are different but I can tell you that they have six months shelf life from October 1 so eat before April 1. That being said they do not have any calories and if NoOodles stay in the original packaging they have been tested good for yours. No bacteria can grow on something that has no calories. Enjoy!
