I don't understand your answer about not having an option to stay Saturday and Sunday. If I purchase Option 2 (Check in Friday), wouldn't I be staying Friday and Saturday nights?

Yes, it is still for two nights but you would check in on Friday afternoon/evening and check out on Sunday morining. This allows the room to still be available to someone wanting a Sunday check-in. We wanted to keep the full weekends available to as many guests as possible within our promotional time period.
