It states Limit 2 per visit... does that mean I can stay for 2 nights if I have 2 vouchers?

Yes. You can stay 2 nights if you have the appropriate Groupon vouchers. You could purchase two Option 1 vouchers for any combination of Sunday - Thursday. Or purchase one Option 1 and one Option 2 to stay Thursday & Friday night.
