Each Groupon is for a 2 night stay, so you could purchase two Groupons and stay Friday - Monday, or you could purchase one and add an additional day to your reservation at regular price.

Since the Groupon is for a 2 night stay, the Thursday-Saturday option includes Sunday night if you check in on Saturday. You could also purchase 2 Groupons to check in on Thursday and check out on Sunday.

Your Groupon ad states that the deal is for a 'standard room' are there specific rooms considered standard rooms or are you able to choose a room?

There are many "standard rooms" at the inn. These are rooms that do not have upgraded amenities such as whirlpool baths or fireplaces. After you purchase your Groupon you can call the inn and request a specific room or upgrade your room for an additional fee. Room # 18 would be an example of a standard room.
