George Stone Crab’s team of more than 80 fishermen combs the high seas from October to May, gathering between 3,000 and 5,000 pounds of claws daily. Crab seekers order medium-sized pincers ($19.95/lb.) for appetizers or to get acquainted with the sea’s most savory crustaceans. Like a dilapidated sandcastle, hearty seafood appetites crumble under the weight of large ($29.95/lb.), jumbo ($36.95/lb.), or colossal ($43.95/lb.) claws. To preserve flavor and cut down on mitten costs, claws are never frozen, and, on the morning orders are placed, they’ll be cooked and packaged, ensuring swift delivery and optimum freshness.
