Join nutrition masters Andrea Mattson and Dietrich McGaffey for a lesson in the foodie chemistry of human health—overviewing how flora and fauna are used as medicine in various cultures, and how oils, seeds, fruits, veggies, and beneficial bacteria tap into the body’s innate knowledge. After learning the basics, you’ll get hands-on to craft your own sumptuous vegetarian meal, focusing in particular on seasonal and local Midwestern produce.

This experience lasts two hours and 30 minutes. Each event is capped at 16 participants; each event requires a minimum of 2 participants in order to take place.
Andrea Mattson is the manager of Edible Alchemy Foods Co-operative, a local and sustainable produce and bulk co-operative that strives to create community around food. Through this endeavor, Andrea has her green thumb on the pulse of Chicago’s locavore movement, as she cultivates relationships with new and existing local farmers. Andrea is also a member of the Eco Collective in Pilsen where she manages the rooftop garden, overseeing the building, planning and maintenance of a green urban oasis—not to mention, she leads regular workshops on everything from gardening and composting to cooking.

Events take place at Edible Alchemy, whose tables overflow with locally sourced and sustainable produce, homemade breads, and long-lasting legumes. The team behind Edible Alchemy not only supports local growers and food artisans, but also spreads nutritional education throughout the community with events and workshops that focus on seasonal ingredients.
