For this exclusive event hosted by Groupon, RM Champagne Salon's dining room transforms into a chic cocktail party, where servers at eight stations stand ready to explain the connections between European-inspired bites and thoughtfully paired tastings of cocktails, wine, and bubbly. An open bar serves full-size drinks, and electric violinist Bridgid Bibbens, who's performed with the likes of Christina Aguilera, Jay-Z, and Josh Groban, creates the soundtrack for the evening.

Head down the tucked-away alley that serves as RM Champagne Salon's entrance, and it feels like you're entering a secret society in fin de siècle Paris. Step inside, and that feeling is magnified. Exposed brick and inky-blue walls surround small, intimate tables, the soft glow of candles, chandeliers, and Moroccan lamps illuminating antique mirrors and dramatic fireplaces. On the cobblestone patio, string lights and lanterns twinkle over diners as they nibble Chef Jared Van Camp's trout meunière or ravioli made with quail eggs. Adventurous palates can also explore an ambitious lineup of cheeses, caviars, or Chef Nate Meads' nightly parade of pastries, petit fours, and mignardises.
But the star attraction is the artfully curated wine list, which spotlights estate-grown champagne and sparkling wine from artisan vintners. The restaurant's dedication to champagne can be seen even in its name: RM stands for récoltants-manipulants (harvester-makers), the French term for grape growers who make wine using grapes grown on their own estates.
After opening in 2012, RM Champagne Salon quickly garnered praise from both critics and customers, with Eater calling it "the city's reigning queen of bubbly bars" and Time Out Chicago quipping, "Heaven? Who needs it when there's RM?"
