Diners can plan to visit one of the food truck’s rotating schedule of stops to sample whole or half gourmet dogs. Eccentric varieties include the okra-topped alligator sausage in a chipotle rémoulade, the sherry duck sausage with caramelized pears and a thai red-curry sauce, and the Sheboygan brat with mustard-seed sauerkraut and Merkts cheddar cheese. Each punch on the punch card has an $8 value. Haute Sausage is closed most Saturdays and every Sunday.

That’s where Rich Levy comes in, driving one of Haute Sausage’s two food trucks to convenient locations throughout downtown and Hyde Park. Rich draws upon his South African roots, the traditions of his adopted midwestern home, and his parents, who were sausages, to create his rotating menu of gourmet sausages rooted in an Afro-midwestern fusion of flavors.
