Local and national businesses gather at the Healthy Living and Gluten Free Expo to ease the inconveniences of those living with a dietary limitation such as gluten intolerance. Vegan feminist Carol Adams concocts meat-less delicacies before an audience during a live cooking demonstration from 10:15 a.m. to 11 a.m. From 11:30 a.m. to 12 p.m., Amy Begley, who competed in the 2008 Summer Olympics in Beijing, discusses her life as a Nike Oregon Project athlete following her 2006 diagnosis of celiac disease. Other events include a wine tasting, a lecture by Dr. Peter Lind on how to eat healthy, and a presentation on how to repurpose a Hot Pocket as a mattress for a garden gnome.

Healthy Living & Gluten Free Expo

At The Healthy Living & Gluten Free Expo, dozens of gluten-free vendors and wellness consultants share their insights on the benefits of a gluten-free lifestyle—especially for those who suffer from celiac disease, gluten intolerance, and other auto-immune disorders. Visitors can peruse the offerings of businesses such as Gluten Free Nana and Legit Pizza, or glean knowledge from speakers on topics such as how a gluten-free diet can help prevent cancer. Cooking demonstrations are also a big part of the expo, showing crowds how to whip up gourmet gluten-free meals.
