The wine-making course consists of four 65- to 90-minute sessions:
- In September or October, sort grapes and put them in the crusher before measuring acid and sugar levels. A champagne toast marks the experience, as expert winemakers detail the fermentation and pressing process.
- During the first racking session in January or February, students taste the young wine before racking, which adds acid, oak, tannins, and sulfur dioxide. Groups pump and siphon the wine, clean equipment, and learn more about the barrel-aging process. Another post-rack tasting highlights changes in the wine from these processes.
- Blending takes place about 10 months later, during which students can precisely mix wines for a personalized taste.
- 11–14 months after the initial process, students bottle, cork, wax, and label six bottles of wine to take home. Bottling is celebrated at the winery with a tasting and small food plate as experts explain bottle aging and proper storage.
During the wine-making process, students can enjoy 70% off glasses in the tasting wine as well as complimentary wine pairings when available.
