At JaJora Olive Oil Company, it’s not unusual to sample an olive oil whose olives were plucked from the vine recently. It’s a sign of JaJora’s mission to infuse local meals and pantries with only the highest quality gourmet oils and vinegars. The store’s oil experts source extra-virgin olive oils and ship in balsamic vinegars from Italy’s Emilia-Romagna region, the birthplace of balsamic vinegar. Oils and vinegars are then stored in stainless-steel fustis and bottled to order.

At the oil-and-vinegar bar, customers can savor tastings of more than 45 varieties of organic, herb-infused, and fruit-infused extra-virgin oils and vinegars.
