Jiallo's African-Caribbean Cuisine
Mohammed Jiallo's culinary roots stretch back more than a century. At age 12, he worked at his father and grandfather's restaurant in Guinea. The establishment, according to the Indianapolis Star, has now been open for more than 100 years. From his post in the kitchen, he continuously added to the mental catalog of African and Caribbean platters that he now re-creates at his own American business.
At Jiallo's African-Caribbean Cuisine, Mohammed is the owner, chef, and resident inventor, testing items that aren't on the menu by ferrying them to tables as samples instead of hiding them in giant after-dinner mints. His staple entrees include oxtail and jerk chicken as well as Senegal's national dish, tiebdjen, fried fish with cabbage and red rice.
