Justin Tatum, head winemaker for Malibu Rocky Oaks, leads students through a 70-minute tour and class covering the basics of winemaking. The classes cover the process of harvesting grapes, crushing them, and ensuring proper fermentation. Students then learn about how wine is barreled and aged, and the instructor outlines the racking process, which allows sediment to settle and flavors to improve. Classes are offered on Saturdays at 3 p.m., 4:15 p.m., and 5:30 p.m.
