During three-hour sushi-making lessons, Madame Saito teaches up to 35 students how to create two regular sushi rolls, two reverse rolls, two hand rolls, a shrimp-tempura roll, a soft-shell-crab-tempura roll, and 20 pieces of nigiri and sashimi. Madame Saito
