Mayahuel knows tequila is more than just alcohol—it's also a town, a region, and a feather in Mexico's cap—but the staff tequila maestros’ encyclopedic knowledge of the agave-derived spirit spans scores of tequilas from Mexico's five appellation territories. An adjacent tequila museum whets guests' appetites for tequila cocktails such as La Flor with hibiscus syrup and jalapeño, and the Mayahuel Fresca de Agave with muddled cucumber, agave nectar, and lime and grapefruit juices.
Owner Ernesto Delgado oversees dinner and lunch menus that give new life to ubiquitous Mexican recipes; rib-eye steaks wear crowns of chorizo, 32 ingredients harmonize within the mole poblano, and a small plate called Eclipse de Sol features layers of sliced beets, oranges, and pickled onions that are only visible from the Northern Hemisphere. Mayahuel also caters to vegans and vegetarians with a special menu of guacamole enchiladas and poblano peppers stuffed with cheese or zucchini and corn.
