Groups take a seat around Oliana's olive-oil bar, where staffers guide them through tastings of dozens of extra-virgin olive oils and flavored oils and vinegars. Fresh fruits, corn bread, and bread serve as vehicles for the liquid fare. After taste buds explore exotic flavors, each person may select a 60-milliliter bottle of olive oil to take home, not including truffle oil. Oliana is open Monday–Saturday, 11 a.m.–7 p.m., with tastings from 7 p.m.–9 p.m., and Sunday, 11 a.m.–5 p.m., with tastings from 5 p.m.–7 p.m.; call for scheduling details.

Amid the bottles of specialty oils and vinegars are pantry staples such as extra-virgin olive oils handy for making dressings, sautéing meats, and flavoring sauces. The store also stocks flashy balsamic vinegars, infused with flavors such as black cherry, pineapple, and espresso, as well as vinegars of the traditional variety that boast a rich flavor enhanced from hibernating in oak barrels for 18 years.
