Richard Sandoval's Pampano brings the flavors of coastal Mexico to New York City in three different dining rooms. At the original Pampano, beach-inspired white-on-white decor sets the stage for gourmet dishes such as salmon a la parrilla, red chile–marinated and paired with Swiss chard and tomato; caldo de mariscos, shrimp, mussels, scallops, the catch of the day, and marble potatoes; and cerdo a los tres chiles, braised pork shoulder topped with sun-dried chile peppers and rice-manchego croquettes. Downstairs is the more casual Pampano Botaneria, diners share small plates of rock shrimp in coconut guajillo sauce and duck with wild mushroom and glasses of sangria. Meanwhile at the Crystal Pavilion Food Court, Pampano Taqueria serves old-fashioned tacos, quesadillas, and burritos.
