I see that it's not good for "printing"... does that mean custom stationery as well? I'd like to get some embossed note cards with envelopes - could I use it towards that ?

Yes, you may use this Groupon towards embossed note cards with envelopes.

do you have to just use the coupon on what was listed in the ad -kids’ pony cards ($30 for 20 cards) or Odd Balls’ queen of diamonds invitations ($11.25 for 10 cards), or personalize papers with a circle monogram stamp ($40) or can you use it on anything else regular price in the store? Thank you.

No - those were just some examples of the offers available. You may use this Groupon for anything on the website, except with other coupon offers, printing, wedding promotion, or sale merchandise.
