The lunch and dinner menu of natural and organic products includes bottomless chips and salsa made from scratch ($6), chorizo tacos ($6 for two), and a lobster, corn, and avocado quesadilla ($16). The dinner menu also includes entrees such as chicken enchiladas smothered in cheese ($16) and Mexican red mole over meat and sautéed jersey beans ($17).

Pop's Garage

Owner Marilyn Schlossbach knows how to run a restaurant. In fact, she knows how to run five of them along the Jersey Shore, as the New York Times points out. And at as a partner at Pop’s Garage, Schlossbach pours more than 25 years of restaurant experience into her kid-friendly Mexican taqueria, which evokes the festive, summer atmosphere of Sayulita, Mexico—a regular surf spot for Schlossbach and her husband/business partner.

That laid-back surf mentality is also echoed in Pop’s menu of made-to-order dishes, each handcrafted from locally sourced, natural, and organic ingredients including fresh lettuce and cherries from the eatery’s onsite garden. Taco shells are packed with chicken and chorizo, quesadillas ooze with cheese, and burritos are stuffed with ruby rice. Just as genuine as the ingredients are the recipes they are made from. Schlossbach explained to the New York Times, “Our intent is to be authentic. . . . One of [the chefs] makes his mother’s mole, a red mole,” which is just one of the menu’s several mole sauces. Though Pop’s main locale in Shrewsbury remains open year-round, additional locations open up during the warmer months to supply locals and tourists with fresh Mexican cuisine.
