The meal includes:

  • Two multicourse improvised tastings (a $280 value)
  • Two glasses of champagne upon arrival (a $20 value)

During each tasting experience—which may last for up to four hours—guests sit down to a list of main ingredients. To kick-start their culinary adventure, they cross off those that they dislike and pencil in any allergies or dietary restrictions they may have, such as veganism or gluten aversion. Then chefs compose a symphony of impromptu tasting-size dishes with the ingredients that remain. Past dishes have included beef with pickled ramps and wasabi butter, mushroom-braised veal with peas and mint, and red-wine-poached salmon with artichokes. Chefs recommend their tasting meal for more adventurous diners, since customers are not fully in control of what they receive.

Chef Joshua Hebert loves to improvise. As the helm of Posh Improvisational Cuisine, he channels his passion into impromptu seasonal tasting menus that range from five courses to multi-hour sensory experiences. Alongside his crew, he transforms small plates into canvases flecked with flavor, working behind a wall of windows that give diners full view of the kitchen. Though patrons can guide the experience by crossing out ingredients that they dislike, that they’re allergic to, or that have a long-standing feud with their families, the dishes are ultimately out of their control—placed instead in the hands of the culinary artists. The conceptualization and execution of each dish happens on the spot, with beef, lamb, and seafood combined with sauces, seasonings, and vegetables and prepared with American, European, and Asian techniques. Servers ferry the finished masterpieces through a dining space that reflects Posh’s culinary style: splashes of white and orange on cool grays, polished floors, and floor-to-ceiling windows looking out onto lush greenery.
