Succulent steaks headline a seasonal menu that also features fresh seafood dishes and carefully crafted sides. Diners can dig into the Prime cowboy ($45), a 20-ounce bone-in rib eye, wrangle a Black Angus 12-ounce strip ($37), or savor the grass-fed 8-ounce fillet ($41). The organic bone-in pork chop ($29) is accented with jalapeño-spiced polenta and sautéed asparagus, and the roasted, skin-on rainbow trout ($35) swims alongside sweet-potato hash. Wines by the glass and bottle include Fleur De Lyeth meritage ($32) and Decero malbec ($34).

Prime 1000

When most people think of art, their minds may fill with images of famous paintings or sculptures. But at Prime 1000, diners alight on a different kind of art––one the eatery dubs “the art of steak.” With this approach, each dish is painstakingly prepared, with special attention paid to its presentation, which may include sprigs of fresh parsley or the autograph of da Vinci across a T-bone. Steaks are carefully selected for their flavor and tenderness, whether they hail from Australia or the nearby grassy fields of Missouri.
