Though their ingredients are sourced locally, it's not the flavors of the Pacific coast that the chefs at Primitivo Wine Bistro invoke. Instead, they have created a full menu of small plates which, when mixed and matched, give a culinary portrait of the Mediterranean. Chefs honor different regions with dishes ranging from the Moorish rack of lamb in a mint sauce to the Moroccan-inspired medjool dates wrapped in bacon. Chefs add a touch of the sea to most dishes, whether it's anchovies in Caesar salad dressings or the decadently placed meat in the truffle lobster crab tower. And though the chefs stick to the Mediterranean for inspiration, sommelier Daniel Deny composes his wine list with bottles from around the world. The resulting selection is easy to browse thanks to its organization by country and style, rather than by grape squishiness.
