While guests sit at candlelit tables admiring the luminous stained-glass window and spotlighted artwork, chefs are frying up savoury ground-beef kofta with housemade seasonings, cooking lamb shank with kabsah spices and tomato paste, and marinating morsels of chicken in yogourt, garlic, fresh lemon juice, and olive oil for shish taouk skewers.
