Slate Wine Bar + Bistro
As a lawyer, Elizabeth Banker traveled the world. But when she wasn’t swarmed with depositions, she would head to local wineries and dream about which brands and styles she would choose for her own potential restaurant.
That dream restaurant became a reality in August 2012 when she opened Slate Wine Bar + Bistro. With its Thrillist-dubbed “French bistro vibe…with a barnwood bar, chalkboard menus, and framed vintage corkscrews,” the eatery has gained a world of praise since its opening. Many of those good feelings have circulated around the eatery’s domestic and international wines, all of which are small-production varieties with many eco-friendly options.
On the bistro side of Slate, the executive chef adds flare to the seasonal brunch, lunch, and dinner menus pairing grass-fed meats and local seafood with unique ingredients, such as french toast stuffed with dried apricot. Diners can also pair glasses of wine with a diverse selection of artisan cheeses and charcuterie—such as Canya de Cabra (goat cheese) and chorizo—or request that a dish be transformed into a vegetarian, vegan, or funnel-appropriate meal.
