Texas Mead Fest highlights the honey-brews of three local producers: Enchanted Manor Winery, Rohan Meadery, and Dancing Bee Winery. When Enchanted Manor Winery's chief mead-maker prepares his brew, he follows a recipe from a 17th-century cookbook from the court of King Charles I. Rohan Meadery's producers also call upon historical references, such as Bacchus's dream journal, as they re-create mankind's oldest fermented beverage in small, handcrafted batches. At Dancing Bee Winery, mead producers focus on creating a diverse spectrum of flavors.
