During the one-pot, slow-cooking process, students infuse chicken or vegetarian tagine dishes with rich, distinctive spices including coriander, cinnamon, cumin, and garlic, and also incorporate preserved lemon, olives, nuts, and dried fruit. Throughout the class, participants learn simple techniques that are easily reproduced in home kitchens.
