Valentine’s Day–, Easter-, and spring-themed classes cover different frosting styles and techniques. Ultimately, students take home three decorated cookies and an array of recipes. Valentine’s Day–themed classes take place prior to February 14. Easter-themed classes take place from February 16 to March 31, and spring-themed classes take place from April 1 to May 31. Class slots should be reserved before the class date, and all necessary equipment is provided.

At the International Sugar Art Collection by Nicholas Lodge, Lodge and his team of confectioners teach their protégés not only to craft lifelike exotic sugar flowers, but also to roll fondant, manipulate buttercream, and create funky desserts, such as a cake laced into a chocolate corset.

Since 1992, Lodge—a sugar-craft expert who has worked for royalty—has helmed the center, which boasts a sister location in Tokyo.
