In your own words, how would you describe your menu?
My menu seeks to combine two staples in Texas: Mexican comfort food and Southern cuisine.

Are there any dishes on the menu you consider to be a hidden gem—not necessarily the most popular, but surprisingly delicious?
My ancho barbecue sauce with braised pork shank.

Do you adhere to any sustainable or eco-friendly practices?
Local and seasonal as much as possible. I believe that using fresh and local or regional products can produce amazing dishes.
