Filipino comfort food abounds at Topsilog. Longanisa, an anise-scented sausage, is crafted in house and by hand, resulting in thick, dense links whose sweet taste is balanced by a generous scoop of garlic-fried rice. A curative breakfast consists of sweet-cured pork tocino and the yolk from a sunny-side-up egg seeping into pillowy mounds of rice. The kitchen also puts its own twist on Filipino favorites, not by actually twisting the plate, but, for example, serving its bao-style siopao open-faced to better balance the meat-to-bread ratio.
