Gino and Olina Nikolini were modern rarities: actual cobblers making their living designing, building, and selling high-fashion shoes. They learned their craft in their hometown of Thessaloniki, in the Macedonian region of Greece. While their business flourished and kept them tied down in America, they grew to miss their homeland—especially its food. So, they moved into a new small storefront and started to cook the dishes that they missed. As an added twist, they chose to use entirely organic ingredients, and to sell their famed shoes out of the same space.

The chef-cum-designers use a small-batch cooking style, allowing them to have total control over the taste and health of all dishes, and ensuring that all dishes are too petite to ride a rollercoaster. They craft their quality ingredients into a famed moussaka as well as platefuls of baked wild-Alaskan salmon, certified heart healthy by Medical City Dallas Hospital’s staff dietician.
